Tom traded bespoke suits for a jacket with his name on it when he stepped into a professional kitchen at age forty. For fifteen years his career went from making minimum wage on the line to owning restaurants and helming the legendary Atchafalaya in Uptown New Orleans. When COVID nearly took him away he decided to step back from the stove and pursue cooking as a passion for his friends and family. He started cooking at age eight and hasn't stopped, but now he is motivated by passion alone. On rare occasion he accepts private engagements, but for the right table, the right menu, and the right reason.
